I am Signe hailing from Riga, Latvia, committed to crafting handmade, flavorful artisan breads inspired by our Northern European roots. At the heart of my mission is a desire to raise awareness about the power of healthy, wholesome, delicious true SOURDOUGH.
All our breads are USDA Certified Organic, Certified Vegan, made with only natural organic ingredients and extensive fermentation techniques to infuse our dough with natural and healthy properties. Our low-gluten gourmet sourdough is naturally leavened and saturated with natural lactobacillus bacteria and nutrients to help support better digestion and immunity.
A medical doctor, dedicated homemaker, and self-proclaimed gourmand, I embarked on a mission to find the healthiest bread for her family, only to discover grocery store breads were factory-processed yeast and GMOs made from a list of precarious ingredients.
Driven by my medical expertise and a sense of personal responsibility towards the health of my family, I set out to recreate tried-and-true ancient Latvian dark rye and scalded rye, Northern European whole grain, and authentic French sourdough recipes.
After months of trial and error, I perfected our signature Latvian-inspired 100% dark rye sourdough, which had always been a lifelong breakfast essential. With a 150-year old sourdough starter, the highest quality organic ingredients, and lengthy fermentation practices, we created authentic, hearty, and nutritional gourmet breads with character and complexity of flavors.
What began as a passion turned into a mission that initially we named Organic & Slow. We care, we craft, and we’re changing the bread-making and bread-eating norms. Sourdough bread is the most ancient bread on our planet, dating back to 1500 BCE when ancient Egyptians accidentally discovered that the combination of flour and wild yeast (lactobacillus spores) produced a rising dough. The term “sourdough” was coined during the late 1800’s when it arrived in San Francisco during the Gold Rush Era.
Known for its savory taste and numerous health benefits, sourdough is an essential and nourishing food that’s been part of the global diet for centuries. Sourdough consists of the perfect balance of beneficial bacterias that contribute to our health, and is especially valuable for those individuals with a digestive disorders or gluten sensitivity.
At The Real Bread, we have built a curated menu of nourishing sourdough recipes that will appeal to a variety of palates, from savory to sweet and sour. Each original handcrafted recipe harmonizes distinctive flavor with nutrient-rich value. We thrive on bringing substance to Sustenance.
All of our gourmet breads are made exclusively with Certified Organic and Vegan ingredients of the highest nutritional value in our nut-free premium facility. All of our recipes share a common foundation made only of a few ingredients: organic flour, water, salt, and sourdough starter. A half teaspoon of organic coconut oil is applied only to coat our baking pans, with the exception of our French Sourdough Bread.
